Inside the "Center of Excellence"...
Center of Excellence is mostly a joke, but the sharpening equipment shown is of the highest precision and quality and produces a superior edge, almost always sharper and more durable than the knife when it was new. The images show the equipment used in the multi-step process to sharpen, deburr, hone, and test knives. Fixtures are used in each step to control the edge angle.
